Fine dining at home with Scotland's next top chef

This July, we celebrated my sister's graduation with a very special fine dining dinner, and it turned into a night to remember. What made it extraordinary? My sister's boyfriend's brother, Callum Shuttleworth, cooked the entire meal from my parents' home kitchen.

Callum has worked at a 3 Michelin Star restaurant in London and is currently spending his working days cheffing on a private yacht. So to have him bring that level of fine dining flair to a family meal was something truly special.

The evening began with a delicate trio of snacks: pea and mint gougere, confit potato and salmon croustade, followed by a starter of hand-dived scallops with pickled carrots and a silky dulse beurre blanc. So fresh, and probably my favourite dish of the whole meal.

The main course was a standout of roast sirloin of beef with oxtail-stuffed onion, potato terrine, bordelaise sauce and a smooth watercress and onion puree. Every element was cooked to perfection.

For dessert, Callum served his elegant take on strawberries and cream, finished off with tablet and whisky jellies to end a spectacular meal on the perfect sweet treat.

Each course was paired with thoughtfully selected wines by my partner, who also treated us to a brilliant set on the bagpipes, making the evening feel even more memorable and uniquely Scottish.

The whole meal was a fine dining experience that could have come straight from a Michelin Star kitchen, served in the comfort of our own home. Callum Shuttleworth is a chef to watch, and we can't wait to see where his talent takes him next.
